Description
Giallo di Costa Timorasso is a perfumed white wine by Daniele Ricci , a producer who with this label confirms his innovative character, in the Piedmontese wine context. To make this wine, grapes of the native Timorasso variety are used, grown organically. The vines are on average twenty years old and grow on soils rich in marl, which give the bunches a unique sensory profile. Once the rigorous manual harvest has been completed, the winemaking process begins in the cellar with alcoholic fermentation which involves the use of indigenous yeasts. For about three months the grapes macerate on the skins in steel vats. The subsequent refinement lasts for three years in wooden barrels and for another two years in the bottle. Giallo di Costa Timorasso is bottled without any clarification. Excellent to be enjoyed immediately, the wine can still evolve for at least another 3 years.
