Description
Pian di Nova Toscana Rosso IGT Bio is a wine with intense aromas from the Il Borro winery. The label is the result of a blend that largely includes Syrah grapes, present for 75%, and Sangiovese grapes. Both the international and local grape varieties are grown at about 200 meters above sea level. The substrate is composed of sand and skeleton, two elements which ensure drainage and nourishment. Each variety is harvested manually when it reaches maturity and vinified separately. Upon arrival in the cellar, the bunches are cold macerated for about two days. This is followed by alcoholic fermentation, which lasts about ten days, and decanting for 6 months. For the refinement, the company prefers the use of second and third passage oak barriques, where the wine remains at least 12 months. Pian di Nova Toscana Rosso IGT Bio fully expresses all its potential, after an evolution of a few years in the cellar.
