Description
Pinot Bianco 'Quintessenz' Alto Adige DOC is a refined white wine produced by the Cantina di Caldaro , a reality that with this label pays homage to one of the main vines of this area, so suitable. It is obtained from Pinot Bianco grapes alone, grown on vines that arise on Dolomite soils with a prevalence of limestone. Here at 600 meters above sea level and with an eastern exposure, the grapes have the opportunity to ripen in ideal conditions. After a very accurate manual harvest, the work in the cellar begins with a soft pressing of the grapes, followed by a spontaneous fermentation on indigenous yeasts. The particularity of this phase of vinification is found in the use of 500 liter wooden barrels. The subsequent refinement continues in oak barrels and lasts about 10 months. Fresh and enveloping at the same time, Pinot Bianco 'Quintessenz' Alto Adige DOC is a structured, rich, intense white on the palate, a round and persistent wine, with excellent longevity, able to accompany demanding dishes based on white meats .
