Rosso di Montalcino DOC is a wine produced by the La Cerbaiona winery, a winemaking reality that faithfully interprets the peculiarities of the denomination. This intense and very fragrant red wine is obtained from the vinification of only Sangiovese grapes, a variety that has become a symbol of the ampelographic heritage of central Italy and in particular of Tuscany. In the vineyard, the work is characterized by a traditional approach, the objective of which is to limit human intervention as much as possible with a view to preserving biodiversity and allowing the grapes to express themselves authentically. When the bunches have reached full sugar and polyphenolic ripeness, a rigorous harvest begins. Once in the cellar, the grapes are left to ferment spontaneously on indigenous yeasts. To complete the refinement, the wine is placed in fine oak barrels for a year. The appearance of Rosso di Montalcino is bright and clear, with a ruby colour; the nose has good intensity and fragrance; on the palate the wine is harmoniously dry, has strength and freshness with good aromatic persistence. Perfect right away, Rosso di Montalcino DOC can be stored for over 5 years in the cellar.
