Sauvignon 'Praesulis' Alto Adige/Sudtirol DOC Gumphof 2021

Sauvignon Praesulis Alto Adige/Sudtirol DOC is a white wine produced by the Gumphof Markus Prackwieser Dolomite winery. Only grapes from the international Sauvignon Blanc variety are vinified for this label. The plots are located about 450 meters above sea level, on soils rich in limestone. The vines are cultivated using pergola and espalier systems, which optimize the benefits deriving from the microclimate and sun exposure. Towards the end of September the manual harvest takes place with selection of the best bunches. In the cellar, the grapes undergo rapid maceration on the skins and soft pressing. Spontaneous alcoholic fermentation follows, which takes place for a third of the must in oak barrels. The wine first ages in steel on the fine lees for 8 months and then another 6 months in tonneaux. Sauvignon Praesulis Alto Adige/Sudtirol DOC is perfect immediately, but can also be enjoyed with pleasure after a couple of years.
