It is in fact a peated single malt, originally produced by Caol Ila, a well-known Islay distillery, which is aged inside barrels that had previously been used for bourbon. After this first phase of rest, which lasts about ten years, the whiskey is placed inside European oak barrels, in which the Hermitage, a red wine from the Rhône area, was aged. Here the whiskey rests for another three years, a period in which it takes on unique and complex scents.
