'Fourchaumes' Chablis Chanson Pere ' Fils 2022

The Fourchaumes Chablis Chanson Pere & Fils is produced in the French region of Bourgogne-Yonne, precisely in the highly prized sub-area of Chablis. The Chardonnay used for its production here finds ideal conditions for development. Winters, however, are very harsh and spring is often slow in coming. A beginning of warmth begins to appear in May. The vineyards are managed with extreme care to protect the grapes from temperatures that sometimes drop below zero. The vinification of Fourchaumes Chablis begins with the manual harvesting of the grapes, followed by a soft pressing at a controlled temperature in order to protect the precious varietal scents.
