Barolo DOCG is a wine that is born in the Sordo Giovanni cellar of Castiglione Falletto. The company, founded in 1912, represents one of the most established historical realities in the area and boasts a careful and meticulous production, in full respect of nature. The grapes come from the Nebbiolo vines, grown on lands exposed to the South/West at 350 meters above sea level and rich in clay, limestone and marl. All the working phases do not involve the use of herbicides and chemical fertilizers. After the harvest, the best bunches are selected for fermentation in steel tanks. The maceration takes place with a submerged cap and lasts about 7 weeks. We then proceed with the rest in steel and then for 2 years in large Slavonian barrels. Before being put on the market, the wine needs a further period of refinement in the bottle. Barolo is an intense and enveloping wine, perfect for immediate drinking, but it can evolve in the cellar for over 5 years.
