Description
Calpazio Paestum IGP Greco BIO is one of the most interesting wines among those made by the San Salvatore winery. This label comes to life from vineyards located in Cilento, more precisely in the splendid town of Capaccio Paestum. The very low altitude, between 150 and 200 meters, is a characteristic of the terroir, combined with the soil with a good clay content, perfect elements for optimal ripening of the grapes. The basis of the label is 100% pure Greco grapes, one of the most famous white grape varieties in Campania. The harvest is done manually and involves the selection of only the best quality bunches. The pressing of the grapes is followed by the fermentation of the must, which takes place in large steel vats at a controlled temperature. The refinement lasts for at least 8 months and always takes place inside stainless steel tanks, in order to develop all the qualities of the wine. Calpazio Paestum PGI Greco BIO finds the maximum enhancement of its qualities if consumed after 1 or 2 years of aging in the cellar.
