'Carmenero' Sebino IGT Ca' del Bosco 2018

For a long time, it was believed that Carmenére (a vine originally from Bordeaux) was Cabernet Franc. Despite having some traits in common, it is a different vine: certainly much more intense and spicy. In 1996 Ca' del Bosco, in collaboration with the Faculty of Agriculture of the Catholic University of the Sacred Heart of Piacenza, began a process for the recognition and enhancement of this vine, very well known in South America. Ca' del Bosco's Carmenero is the result of a careful selection of grapes and skilful vinification. The grapes, coming from 2 historic vineyards, freshly picked by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini", a particular system for washing and whirlpooling the bunches, using three soaking tanks and a drying system. The alcoholic fermentation and maceration are carried out for about 20 days, carefully managing the temperature and punching down. After racking, the wine, still hot, is decanted into small oak barrels, 65% new, obtained from selected woods, aged for at least 3 years. The refinement lasted a total of 18 months and after a few months the wine was bottled by gravity, in a natural way. It has a solid and powerful character like the image of the wolf covered in lambskin that appears on the label. On the nose there are hints of ripe red fruit, spices and herbaceous notes. It envelops the mouth in full and full-bodied softness, with balanced tannins. The fruitiness returns to the taste in a discreet persistence that affirms and recalls a precise personality. Very, very intriguing.
