Vinopuro's advices
Recommended glass
Glass
Medium Open Goblet
Glass
It is the perfect goblet for light and medium-structured white wines; these wines do not require prolonged contact with oxygen to best enhance their bouquet. Indeed, a slightly narrower opening of the glass is recommended: this helps the concentration and the direction of the aromas towards the nose. In this way, the perception of the aromas is increased, enhancing the sensations.

Description

The Sauternes AOC of the Carmes de Rieussec winery is obtained from a skilful blend of particularly dried Semillon, Sauvignon and Muscadelle grapes. The vineyards are located in the homonymous region, south-east of Bordeaux, an area of absolute excellence in the production of wine. Here, in fact, the climate characterized by mild days and mists at night, combined with the soil rich in mineral salts allows for optimal development of the grapes. Sauternes is a real miracle of nature. In this suggestive panorama flows the Ciron river, a small tributary of the Garonne, which undoubtedly plays a fundamental role for this precious passito. The terroir is unique clayey-limestone alternating with alluvial pebbles called Grave. All these combinations favor the development of Botrytis Cinerea, or the Noble Mold, which affects the bunches by thinning their skin and reducing their water to favor the formation of a very concentrated juice. The bunch, affected by this mould, will be dehydrated and grayish, but will give a rich and full must which will then age in small precious barrels, to obtain a soft and velvety wine, without equal. We even get to harvest eight or nine times during the month to try to make the most of the organoleptic properties of the noble rot. A passage in barrique is then foreseen, for an average of twenty-four months. The result is a wine with an unmistakable golden colour, on the nose a triumph of candid fruit and acacia flowers that almost recall sweet fruits roasted in the sun. Rich and powerful taste, with a long and pleasant persistence. The combination is easily made with dry pastries, but also with blue cheeses, to arrive at the traditional local combination with the "pate du foie gras". It also lends itself to being a great meditation wine.
