Grappa di Fiorduva is a distillate produced in the Marisa Cuomo cellar in Furore. The company was founded in 1942 with the intention of enhancing the products of the Amalfi coast. The grappa is the result of the distillation of the pomace of Ginestra, Ripoli and Fenile grapes, grown between vines and rocks overlooking the sea of the splendid location. The plants are grown according to the traditional system known as the pergola. Before distillation, fermentation is carried out, that is the process during which the sugars are transformed into alcohol by the yeasts. The distillation process is carried out using the alembic to allow the alcoholic vapors to evaporate together with the aromas, only in this way can the right concentration of alcohol be obtained. Before being put on the market, the distillate needs to age for many years in French oak barrels. Grappa di Fiorduva is a persistent and soft distillate, which has no time limits to be tasted.
