Io Cammino da Solo Timorasso Colli Tortonesi DOC is an elegant white wine from Daniele Ricci , a Piedmontese winery that stands out for the originality of its range. It is obtained from the vinification of only Timorasso grapes, grown on an ancient vineyard with substrates characterized by the high presence of marl and marine sediments. At the conclusion of a careful work between the rows, the manual harvest allows you to select only the best bunches. The vinification begins with a first spontaneous fermentation on indigenous yeasts. Inspired by ancestral methods, the contact maceration on the skins takes place inside terracotta amphorae and lasts for 100 days. The refinement phase lasts one year and involves the use of chestnut barrels, which give unique tertiary scents. At the end of the process the wine is not subjected to any filtration or clarification step. Io Cammino da Solo Timorasso Colli Tortonesi DOC can be enjoyed as soon as it is bottled, but also after a rest of 3-4 years in the cellar.
