Mezcal Castilla by Lágrimas de Dolores is a Mexican drink totally based on wild Castilla, better known as agave angustifolia. The processing involves cooking for at least three or four days in ovens made with volcanic rock and Encino oak. The plant is ground and the resulting compound is left to ferment for up to 7 days in open tanks. Definitely alcoholic, Mezcal Castilla faithfully embodies the terroir of the areas of origin and owes its most salient peculiarities to double distillation, carried out in copper stills, exactly as tradition dictates. The agave used for its production is found in the intense and exotic aroma and underlines the nuances of the earth with a wild flavour. Immaculate and translucent Mezcal, it has smells and flavors that make it unique. It is a bright distillate, rich in aromas, smoky flavor and herbaceous notes, typical of young distillate.
