Description
Sauvignon Alto Adige DOC is a mineral and fragrant white wine, produced by the renowned St. Pauls winery. It is obtained from the single-variety vinification of Sauvignon Blanc grapes, an international variety that expresses itself excellently at the foot of the Dolomites. The plots from which the bunches come are located in the suitable area of Oltradige. The vineyards are located between 250 and 450 meters above sea level and boast ideal conditions for the vines, which can grow luxuriantly until the grapes ripen. The harvest allows the best bunches to be selected with great care. Upon arrival in the cellar, the grapes are destemmed and then placed to ferment in stainless steel tanks with rigorous temperature control. In the same vats the wine ages on the lees for a few months. Sauvignon Alto Adige DOC is a white wine designed to be appreciated shortly after bottling, when the typical varietal freshness emerges.
