Essenzia Vigneti delle Dolomiti IGT is a sweet wine produced by the Trentino winery Pojer e Sandri . The label is the fruit of a blend that includes Riesling, Kerner, Sauvignon, Chardonnay and Gewürztraminer. These are local and international varieties that find a favorable environment for development in the vineyards of Faedo and Grumes. The substrate composed of dolomite and limestone gives great finesse to the grapes, which are left to overripe on the vine until the end of autumn. The bunches are harvested only after the appearance of noble rot, which occurs following the first night frosts. The maceration on the skins which lasts up to twenty days is followed by the alcoholic fermentation in large steel tanks. In the same containers the wine then refines for a long time acquiring very complex scents.
