Description
Tabarro Valpolicella Classico Superiore DOC is a red wine with intense aromas, produced by the Venetian winery Valentina Cubi . It is the fruit of a blend that includes three of the traditional local varieties of the denomination, namely Corvina (65%), Rondinella (25%) and Molinara (10%). On the plots the vines are cultivated using the Guyot system and place their roots on gravelly soils. The vineyards are managed in line with the principles of organic farming, preserving the balance of the ecosystem up until the time of rigorous manual harvesting. In the cellar, vinification involves the use of special conical containers, inside which the grapes ferment and macerate in contact with the skins for a couple of weeks. Subsequent refinement involves the use of second or third passage barriques, where the wine remains for at least one year. Excellent immediately, Tabarro Valpolicella Classico Superiore DOC can be appreciated even after resting in the cellar for 4 or 5 years.
