The Clement maison produces Vieux Rhum Agricole respecting the rules of the AOC. The purity and richness of the cane juice are fundamental in the production of a natural rum. The production area is at Domaine de l'Acajou. Distilled in 2002, after an initial phase of aging in oak barrels for a period of about 10 years, the rum is left to rest for a few years in ex-Bourbon wooden barrels at the Habitation Clément. At sight it has a dark amber color. Hints of raisins on the nose, dried fruit, wood and tobacco. On the palate we find it smooth, velvety and complex. In the mouth, an explosion of empyreumatic and fruity notes, which then give way to delicately woody scents, evoking a box of cigars. Ideal after dinner, especially if served in large glasses and able to open its magnificent bouquet.
