Description
Sauvignon Opoka is a white wine produced by the Slovenian winery Marjan Simcic , which enhances the winemaking tradition of a very suitable area. It is obtained from the single-variety vinification of Sauvignon grapes, an international vine capable of expressing itself excellently in these territories. The fifty-year-old vines sink their roots into a substrate rich in limestone and marl, which is locally called opoka. The plots located 250 meters above sea level are managed in the name of environmental sustainability until harvested by hand. The alcoholic fermentation in steel tanks is followed by a 4-day maceration in oak barrels. In the same wooden vats the wine ages for about two years, to then further seal its scents 4 months after bottling. Excellent immediately, Sauvignon Opoka can be enjoyed with pleasure even after 4-5 years of rest in the cellar.
