Caloetto Amarone della Valpolicella Classico DOC is an intense and full-bodied red wine from the Le Ragose winery, an interpreter of the authentic tradition of this historic Veneto denomination. It is obtained from a blend composed of the autochthonous Corvina variety, present for 50%, to which are added Corvinone, Rondinella and other dark grape varieties allowed by the specification. Cultivated on clayey soils rich in limestone, the grapes are harvested towards the first days of October and then placed to dry in the loft in the appropriate wooden boxes. At the beginning of the following year, fermentation at low temperatures in steel is foreseen. After an average of 25 days, the very long aging can begin which is divided into two steps: first 5 years in large French oak tonneaux and then 2 years in smaller oak barrels. Caloetto Amarone della Valpolicella Classico DOC is perfect right away, but it gives enormous satisfaction even after 10-15 years of rest in the cellar.
