Chianti Classico Riserva DOCG Canonica a Cerreto 2014

Chianti Classico Riserva DOCG is a wine that is born in the Canonica cellar in Cerreto di Castelnuovo Berardenga. The company's production philosophy is based on biodiversity and the valorisation of the territory. The grapes come from the Sangiovese, Cabernet Sauvignon and Merlot vines, grown on clayey and calcareous soils located 350 meters above sea level and facing south. The sunny and breezy climate guarantees an excellent ripening of the bunches which are harvested by hand between the end of September and the beginning of October. After selecting the best grapes, the wine is made with fermentation in steel tanks with maceration on the skins, punching down and pumping over. The refinement takes place in French oak barriques for 18 months and continues in the bottle for a further 6 months. Chianti Classico Riserva DOCG is an intense and enveloping wine, perfect to be tasted immediately, but which can also evolve in the cellar for a further 5/6 years.
