Pre-Phylloxera Barbera d'Alba DOC from the Cogno Elvio winery is a red with unique characteristics that comes from 100% Barbera grapes, grown in a 120-year-old vineyard, therefore preceding the phylloxera catastrophe, a nefarious event that characterized the world of wine at the end of the 19th century. These ancient vines are located about 520 meters above sea level, on sandy and calcareous soils. The bunches, thanks to a perfect microclimate, are ready for harvesting towards the beginning of October. The grapes undergo a careful selection, before moving on to the pressing operations. At this point, the must obtained ferments in steel containers at a controlled temperature. The wine is then transferred to large oak barrels for ageing, where it rests for about a year. Finally it is completed in the bottle for another 6 months. Pre-Phylloxera Barbera d'Alba DOC is thus ready to be drunk, however thanks to this double aging period, it reveals itself as having a good longevity, and can therefore evolve well if left in the cellar for a few more years.
