Description
Ultradition Champagne Extra Brut is produced by the Laherte Freres maison which stands out for its innovative approach to viticulture. It is obtained from a particular blend composed largely of Pinot Meunier (60%) to which Chardonnay (30%) and Pinot Noir (10%) grapes are added. All the varieties are grown according to a biodynamic system, in plots with vines over thirty years of age. Following a careful harvest, the first fermentation in the cellar is divided between stainless steel and wooden vats, with partial malolactic development. To give softness and structure to the final result, a percentage equal to 40% of "vin de reserve" is added, previously aged in oak barriques. According to the provisions of the Champenoise Method, the second fermentation in the bottle for 4 years allows the wine to refine on the lees until disgorgement. Ultradition Champagne Extra Brut can be satisfactorily enjoyed right away, or left to evolve for 3 or 4 years.
