Description
The Spumante Valdobbiadene Prosecco Superiore di Cartizze DOCG Dry from the Bisol winery is the highest type (crù, as the French would say) of Prosecco di Conegliano-Valdobbiadene, a DOCG wine from the province of Treviso. It is produced in a small area of 106 hectares extended around Cartizze, a locality included in the territory of San Pietro di Barbozza, a hamlet of Valdobbiadene, where many companies compete for the most valuable Glera grapes for the production of this sparkling wine cru. In addition to having a limited production, Cartizze is considered the best prosecco ever. Technically, it is a sub-denomination of the Valdobbiadene-Prosecco Superiore DOCG, which takes its name from the corresponding sub-area, from the most renowned area ever, namely the hills of Cartizze. To obtain the Spumante Valdobbiadene Prosecco Superiore di Cartizze DOCG Dry, Bisol carries out each production phase down to the smallest detail. The harvest is done by hand at the beginning of October, picking only the best bunches. Then follows the vinification in white and the second fermentation in an autoclave with the Charmat method, as required by the disciplinary, and subsequent aging on the lees. The resulting sparkling wine is very balanced, with fine and persistent bubbles, refined and elegant. It has distinctive qualities of complexity, persistence, elegance and verticality compared to the other types of the Prosecco denomination: ideal to accompany any time of the day, especially aperitifs and appetizers.
