Description
Praeclarus Brut Spumante Blanc de Blancs Alto Adige DOC , made by Kellerei St.Pauls , is obtained only from Chardonnay grapes grown in geologically particular areas, from Dolomite substrates. The vineyards are located in the shadow of the Mendel peak, where the vines derive the maximum benefit from the sandstone and clay deposits. The sudden changes in temperature between day and night and the favorable climatic conditions allow the grapes to ripen on the vine until they reach a perfect sugar concentration. Once ripe, the grapes are harvested by hand and taken to the cellar for pressing. The first fermentation takes place in large wooden barrels and lasts up to 4 months. This is followed by the refermentation in the bottle envisaged by the Classic Method, with over 3 years of aging on the lees. After disgorgement, a minimum percentage of Liqueur d'Expedition is added. Praeclarus Brut Spumante Blanc de Blancs Alto Adige DOC amazes immediately, as well as after 5-6 years of rest.
