After the manual harvest, this wine undergoes a particular aging process in barriques inside a cellar dug into the limestone rock. Here, thanks to the characteristics of the rock walls, temperature and humidity are constant. A process, the latter, which gives particular qualities to this full-flavoured Sauvignon Kante. The result of processing this prized grape is a white with good structure and intensity.
