Description

This Venezia Giulia IGT "Malvasia Cadenza D'Inganno" by Castello di Rubbia is a wine based on botrytized Istrian Malvasia, i.e. with grapes affected by the noble rot Botrytis Cynerea, 70% dried. The harvest is late and takes place following drying on the vine with grapes affected by noble rot. The fermentation is in steel with indigenous yeasts, the maceration on the skins is seventy-five days. The wine thus obtained matures for four years in used Slavonian oak barriques and then ages in the bottle for two years before being put on the market. Intense, complex, deep wine, soft notes of honey, resin, dense, very long and persistent. Great for meditation.
