Description
The Blanc de Blancs Extra Brut Classic Method Spumante is produced by the Monsupello winery in Lombardy. In line with the Blanc de Blancs style, this label is obtained from the exclusive vinification of grapes from the international Chardonnay vine. Once the ideal level of ripeness has been reached, the bunches are subjected to manual sorting before harvesting. After destemming, the grapes are fermented in stainless steel vats with temperature monitoring. A portion equal to 40% comes from Chardonnay grapes from previous years aged in wood. According to the provisions of the Classic Method, the aging on the lees coincides with the refermentation in the bottle, which lasts over four years. Only a small percentage of feed liquid is added to the disgorgement. The Blanc de Blancs Extra Brut Classic Method Spumante can be appreciated immediately, as well as following a further evolution of 3-4 years.
