Description
ABYSS Brut Nature is a Champagne produced by the French winery Leclerc Briant, known for its attention to biodynamics and sustainability in the production of its wines. This Champagne is characterized by a total absence of dosage, that is, it does not contain sugars added after fermentation, which makes it particularly dry and mineral. The blend used for its production is composed of Pinot Noirr, Pinot Meunier and Chardonnay, both grown using biodynamic methods and vinified separately before being assembled. After fermentation, the bottles are immersed in a stainless steel cage and left to age for a period of at least 36 months at a depth of 60 meters in the sea of Saint-Malo Bay, off the coast of Brittany. This underwater refinement process, which is called "aquachrushing", was created by Pascal Leclerc Briant, the current owner of the company. According to his theory, the marine environment can offer ideal conditions for refining wines, thanks to uniform pressure, constant temperature, stable light and the action of the tides. In particular, the effect of pressure on liquids can help develop the complexity and finesse of wines, improving their structure and balance. The result of this particular refinement method is an even more complex, mineral and harmonious Champagne, with salty notes and a distinctive character. Champagne Abyss is therefore a unique and fascinating tasting experience, which combines the tradition of Champagne with innovation and experimentation with alternative production techniques. With a pale golden color and a fine and persistent perlage, floral and fruity notes are perceived on the nose, including white flowers, citrus fruits and green apples, accompanied by a light toasted note. On the palate it is fresh, savory and mineral, with a long and pleasantly dry finish. A truly intriguing Champagne, perfect as an aperitif and also the ideal accompaniment to fish or shellfish dishes.
