Description

Barolo DOCG Cannubi is a red wine of exceptional longevity produced by the Piedmontese company Borgogno . The label takes its name from the most renowned cru of the entire Barolo area, whose origins date back to the distant eighteenth century. In fact, the benefits of calcareous and clayey soil for the cultivation of vines have been known since ancient times. Here the rows enjoy southern exposure and an ideal climate, two factors that contribute to the ripening of the grapes, which are harvested in October. In the cellar, the process begins with an alcoholic fermentation on indigenous yeasts in cement tanks and continues with the malolactic one, which lasts up to two weeks. The refinement phase takes place in Slavonian oak barrels, where the wine rests for a good four years, before resting for another six months in the bottle. It follows that Barolo DOCG Cannubi is a wine of extraordinary complexity, which must be left to evolve in the cellar before being opened for important dinners.
