Description
Bianc 'd Bianc Alta Langa DOCG Spumante Brut Millesimato is a Classic Method sparkling wine produced by the Piedmontese cellar Giulio Cocchi . With its name, which in local jargon indicates the Blanc des Blancs style, this label is obtained from the exclusive vinification of the Chardonnay vine, one of the best known international white berried varieties. Specifically, to produce this wine, clones that typically characterize the viticulture of Burgundy are grown. After careful manual harvesting, the process begins in the cellar with a three-week fermentation in steel vats only. At the end of winter, the cuvée is assembled referring to a single harvest. After the second fermentation, the wine ages for four years with punctual remuage actions performed strictly by hand. Bianc 'd Bianc Alta Langa DOCG Spumante Brut Millesimato is excellent immediately, but can reserve pleasant surprises even after 4-5 years in the cellar.
