'The Apostle' Champagne Blanc de Blancs Premier Cru David Léclapart 2014

Champagne L'Apôtre Extra Brut Blanc de Blancs Premier Cru is produced by vigneron David Leclapart . It is obtained from the vinification and sparkling process of pure Chardonnay grapes. All the bunches used to produce this label come from the plot called Pierre-Saint-Martin, whose vines were planted immediately after the Second World War. Cultivation is inspired by the principles of biodynamics and involves respectful management of the ecosystem which culminates in manual harvesting. In the cellar the first fermentation, which includes malolactic fermentation, takes place in oak barriques, a choice that denotes great respect for tradition. The refermentation in the bottle with aging on the lees, consistent with the Champenoise Method, lasts just under 6 years. After disgorgement, the addition of Liqueur d'Expedition is not envisaged. Champagne L'Apôtre Extra Brut Blanc de Blancs Premier Cru is excellent right away, even if it gives immense satisfaction after 4-5 years of meticulous storage in the cellar.
