'Rosè de Saignee' Champagne Rosé Extra Brut Francis Boulard

The Rosé de Saignée Champagne Rosé Extra Brut is made by Francis Boulard , a production reality that pays homage to consolidated winemaking techniques albeit with innovative ideas. This is the case with this label, obtained from a blend of Pinot Noir and Pinot Meunier with the traditional Saignée method, typical of the finest rosés. In the vineyard, the two varieties are grown organically and the harvest takes place separately in parcels with manual selection of the grapes. The 12-hour maceration allows all the scents and colors to be extracted from the grapes, while the subsequent spontaneous fermentation involves the use of precious oak barrels. According to the Champenoise Method, the refinement takes place during the second fermentation in the bottle. At the end of this phase, the liqueur d'expedition is added in minimal percentages. Rosé de Saigneé Champagne Rosé Extra Brut immediately gives extraordinary sensations, but can evolve for another 4-5 years in the cellar.
