'Sivi' Venezia Giulia IGT Dario Princic 2018

Sivi Venezia Giulia IGT is an elegant and structured white wine, produced by the Dario Princic winery. It is obtained from the single-variety vinification of Pinot Grigio grapes, an autochthonous vine with delicate pink nuances. The vineyards are located in the Collio area and are managed in line with the principles of organic farming. The vines plant their roots on marl and sandstone soils and enjoy the benefits of the particularly favorable microclimate. Once full ripening has been reached, the manual harvest is foreseen with selection of the bunches. Upon arrival in the cellar, the grapes are left to macerate on the skins for a week, to then ferment spontaneously in open oak vats. The refinement involves a rest of over two and a half years in large wooden barrels and a passage of three months in the bottle. Excellent immediately, Sivi Venezia Giulia IGT is a white that boasts a considerable evolution potential of over 5-6 years.
