Description
The Classic Method Spumante Pas Dosé Alto Adige DOC is made by the Haderburg winery, a true excellence of South Tyrolean enology. In the production of this label, Chardonnay grapes are largely used, to which is added a percentage equal to 15% of Pinot Noir grapes. On the slopes of the Hausmannhof cru, the vines draw nourishment from the calcareous and clayey soil. The vines are grown organically with a view to preserving the ecosystem. At the end of the manual harvest, the bunches undergo a first fermentation. This phase takes place for 70% in steel containers and for the residual part in oak vats. As required by the Classic Method, the second fermentation in the bottle coincides with the aging on the lees, which in this case lasts three years. The Spumante Metodo Classico Pas Dosé Alto Adige DOC is excellent immediately, but still boasts the potential to evolve further 3-4 years.
