Description

Champagne P2 Brut is the most important product of the Dom Perignon maison, "brand" of Moët et Chandon; today it is probably the most famous company in the world for the production of champagne. The sparkling wine is made only with the best grapes from the best vineyards owned by Pinot Noir and Chardonnay, in the Grand Cru area of Champagne, vineyards located in the municipalities of Ay, Bouzy, Verzenay, Mailly and Hautvillers for the Pinot Noir, and from those of Cramant, Choully, Avize and Le Mesnil, for the Chardonnay. It is a vintage sparkling wine, as only grapes and therefore wines from a single vintage have been used in its production. The exceptional nature of Dom Pérignon Millesimati lies in their evolutionary process, which is not based on a mere linear path, but on specific expressive phases. These periods are called "Plénitudes", privileged moments in which the wine vibrates at higher and more intense frequencies. P2 is Dom Pérignon's Deuxième Plénitude, the result of 16 years of overall elaboration. The harvest is completed from mid-September, after a capricious summer has however allowed the grapes to reach the peak of ripeness. The processing of Dom Perignon Champagne P2 Brut takes a very long time: after the harvest and fermentation, in fact, this sparkling wine spends about 8 years in the company's cellars to refine in the bottle on its lees, before disgorgement and the final dosage and bottling. This vintage develops a nose with citrus and spicy fragrances, to which are added notes of white fruit. After a slight aeration, the wine reveals touches of vanilla, yeast and toast. In the mouth, the wine is fruity, ripe, fleshy and of great depth. Rich and voluptuous, it is extremely coherent, with a perfectly contained potency. It is a particularly refined and balanced nectar, in all its parts. The Wine Spectator score is very high: 97/100.
