Vieilles Vignes Champagne Brut Nature Blanc de Blancs is produced by Francis Boulard , who collects the legacy of six generations, interpreting it in an unconventional way. The enhancement of the unique terroir is evident in this label made only from Chardonnay grapes. The grapes are grown in the ancient cru of Le Mourtet, where the calcareous and sandy soil gives nourishment and an unmistakable sensory profile. The grapes are harvested only after careful selection. In line with the Champenoise Method, spontaneous fermentation in oak barrels in the cellar is followed by refermentation in the bottle, with aging on the lees for three years. In order to let the varietal notes express themselves in purity, no addition of final dosage is foreseen after disgorgement.
