Franciacorta DOCG Rosè Brut from the Ca' de Pazzi winery is a sparkling wine with a strong but also romantic and cool soul. For its production, a blend of 50% Chardonnay grapes and 50% Pinot Noir grapes is used, coming from vineyards located in the heart of Franciacorta where, thanks to the particular structure of the land and the favorable microclimate, excellent quality grapes are obtained. The harvest is done manually and the grapes, once they arrive in the cellar, are subjected to soft pressing and fermentation in steel tanks at a controlled temperature. The base wines from the various vineyards are vinified separately and then made into sparkling wine according to the classic method with aging on the lees in the bottle for a minimum period of 24 months, in cellars at a constant temperature of 12-15°C. This bubble has a deep and brilliant pink color, with a fine and persistent perlage. The nose reveals delicate notes of berries followed by a large bouquet and fragrant hints of croissants. In the mouth it is very fresh, well balanced and of excellent persistence. A complex simplicity, intriguing and never banal. Perfect as an aperitif, it is also at home in more elegant fish-based meals.
