'The Aphrodisiac' Champagne Premier Cru David Leclapart 2016

L'Aphrodisiaque Champagne Premier Cru Brut Nature is produced by vigneron David Leclapart . It is mainly obtained from Chardonnay grapes to which 20% of Pinot Noir grapes are added. The vines grow in the shadow of the Reims massif and are grown on the Premier Cru plot located in the small village of Trepail. Among the rows the practices are inspired by rigorous principles of biodynamics that reflect the company's philosophy aimed at rediscovering ancestral and absolutely natural processes. After the harvest, the same approach is found in the cellar: this is why in the spontaneous fermentation phase of the grapes the use of wooden barrels. In the second fermentation in the bottle, typical of the Champenoise Method, the wine ages on the lees for six years. When disgorgement is carried out, no final dosage is added. The Aphrodisiaque Champagne Premier Cru Brut Nature is perfect to be enjoyed immediately, but gives the most surprising sensations after long rests in the cellar.
