The Colli Orientali del Friuli Ribolla Gialla Spumante Brut DOC Plus Bastianich wine is among the most interesting labels of the Friulian wine scene and, to be precise, of the Cividale del Friuli area where the lands of the Joe Bastianich family are located, which has continued the local tradition by creating wines that perfectly reflect the territory from which they are born. A terroir that betrays its distant oceanic origin, composed of clays, limestone and sandstones, capable of giving the grapes a particular flavour, with balanced acidity and a perfect concentration of sugar. The Colli Orientali del Friuli Ribolla Gialla Spumante Brut DOC Plus Bastianich label is produced in purity (100%) from the native Ribolla Gialla vine, with a traditional, hand-made harvest to guarantee the quality of this wine. A pressing carried out in a soft way, after manual selection of the bunches, follows the sparkling process with the Charmat Method, or with the subsequent fermentation carried out in thermo-conditioned steel tanks at a controlled temperature (18°C) with the use of selected yeasts, for 8/10 days. The refinement and rest on the "noble lees" take place in steel for a period that varies from three to four months, depending on the harvest characteristics. The result is a very versatile sparkling wine. High acidity, aromatic fragrance, overall structure: these are the factors that have contributed to the success of this particular type of wine. The secret of this sparkling Ribolla lies in the fact that in addition to the grapes harvested at the right time of ripening, every year a certain quantity of the same grapes is made available, however, placed to dry. Thus was born a sparkling wine with a deep, centered straw yellow color and a thick and intense, continuous foam. It is recommended as an aperitif, on hot and sunny summer days.
