Poggio dei Duca Spumante Metodo Classico Brut is produced by the Calatroni winery, a company intent on enhancing the Pavia terroir. This label is the result of the vinification of only Pinot Nero grapes, grown near Rocca de' Giorgi. Here stands the ancient Poggio vineyard, where the over forty-year-old vines benefit enormously from the strong temperature ranges and perfect sun exposure. The harvest, with rigorous manual selection, is followed by a white vinification of the grapes. After destemming, the grapes are left to ferment in steel tanks. As required by the Champenoise Method, the second fermentation in the bottle allows the wine to age on its lees for 4 years. A minimum percentage of dosage liquid is added to the disgorgement. Poggio dei Duca Spumante Metodo Classico Brut is perfect right away, even if it manages to pleasantly surprise after 4-5 years of further evolution.
