Description
The Spumante Metodo Classico Rosé Brut is made by the Foggia winery D'Araprì . This label is the result of an unusual blend of Montepulciano and Pinot Noir grapes, present in equal quantities. The vines grow on the clayey and calcareous substrates that characterize the property's lands facing south-west. Thanks to the climatic conditions and the skilful work done between the rows, the grapes can develop elegantly. When they reach full maturity, the bunches of the two varieties are selected by hand and transported to the cellar. Here the vinification begins with the soft pressing and continues with the fermentation in stainless steel tanks. As required by the Classic Method, the second fermentation in the bottle coincides with an aging of at least two years on the lees. The process ends with disgorgement and a minimal addition of "dosage liquid". Spumante Metodo Classico Rosé Brut is perfect right away, when the freshness and light mineral notes emerge, but it can also age in the cellar for a couple of years.
