Toto Corde Alta Langa DOCG Spumante Brut Millesimato is a product endowed with great refinement which proves to be one of the best labels of the renowned Giulio Cocchi winery. It comes from a classic assembly: a base of Pinot Noir to which a small part of Chardonnay is also added. The grapes, scrupulously harvested by hand, come from a vineyard which enjoys excellent exposure to the sun and is located at about 250 meters above sea level. After the harvesting operations, the bunches undergo a first fermentation in steel vats, at the end of which the must is left to cool to allow the sediments to settle on the bottom. Subsequently, the wine is transferred to the bottle, where it ferments a second time according to the Classic method and is then refined for a period of 36 months. Toto Corde Alta Langa DOCG Spumante Brut Millesimato thus reveals a wine capable of giving great freshness and aroma, if drunk immediately, however it also has a good aging capacity.
